At RAILS we strive to ensure that our produce is from local suppliers wherever feasible and are passionate about using the best seasonal ingredients that the British Isles has to offer. We aim to always provide the highest quality dishes to our customers while also remaining environmentally and sustainably conscious.
Our menu is a harmonious marriage of British and French traditions — the rich depth of flavour and finesse that Parisienne cuisine promises made from the finest British ingredients.
We are very proud of the wonderful suppliers, farmers and growers that we work with — below are just a few highlighting some of our chef’s favourite dishes.
The beef used in our signature dishes, such as our steaks and Beef Wellington, is provided by the award winning butcher, Aubrey Allen.
They use only the top 1% of grass-fed beef and source from areas of outstanding natural beauty around the British Isles, far from pollution with lush grass and plentiful drinking water.
They also select from only ethically reared suckler herds, able to take milk from their mothers and run with their family in a stress-free environment. This, coupled with a minimum 28 day ageing process, all contributes to the tenderness and subtle flavour of the meat.
Our artisan cheeses from Aubrey Allen epitomise quality and taste; we regularly update our cheeseboard to give you a taste of all the gorgeous British cheese they have available. Their cheeses are lovingly handmade by craft cheesemakers, often by the second or third generation of a family.

Beal’s Farm’s Mangalitsa pigs are given free-rein to roam across acres of woodland — foraging acorns, roots, mushrooms, and berries. This natural environment contributes to the exceptional quality of Mangalitsa pork, known for its marbled, creamy fat and rich, flavorful meat.
